We are to spend all day fishing for redfish, the local name for red drum. These giant fish often weigh in at forty pounds, and their numbers in the Mississippi delta marshes are significant, likely because they were rarely fished until Chef Paul Prudhomme popularized a "blackened" preparation of the fish.
